Calypso Restaurant in Sayulita Mexico
Local Sayulita family cooking since 1972.
After an extensive remodel and a giant addition (including a HUGE palapa and complete state-of-the-art modern kitchen) to the longstanding Sayulita landmark, Sayulita’s Calypso now offers diners a fine array of local cuisine in an upscale white-linen dining environment.

The dining room and giant bar aren’t the only new additions to Calypso; Ruben Rodriguez (executive chef) has returned to Sayulita and partnered with his brother Manuel on this exciting new restaurant venture. Ruben has spent the last 19 years in the Los Angeles, CA area as a career chef in fine-dining bistros and restaurants. Sayulitians (short and long-term) can now enjoy the delectable dishes prepared under Chef Ruben’s culinary excellence.
The beautifully polish wooden bar stretches over 20 feet in length and provides a fantastic “elbow rest” for anyone looking for a glass of beer, wine or their favorite cocktail in a local friendly Mexican environment. You might want to try one of Suave’s famous margaritas. Your eyes will be memorized by the giant three-dimensional painting/sculpture created by the notorious Ropi.
In addition to the giant palapa-covered dining area, the Rodriguez brothers have also created a hacienda-style eating area perfect for one large group or a few intimate tables. The area is keenly decorated with Mexican antiques including artwork, farming equipment and household goods.
Some of the local dinner favorites include fresh calamari with a variety of dipping sauces, lemon-nut crusted mahi-mahi, and Ruben’s favorite dish; blackened fresh-catch quesadillas.

Calypso is our favorite Fine Dining establishment in Sayulita. Ruben and his team make the best Fettucine Alfredo with fresh Camarones we have ever had and the freshest, delicious Tuna Steak. We also enjoy a great choice of wines to pair with our meals.

This is my first recommendation ever cause I just don't usually do this but I feel so strongly about Calypso's "Fish of the Day" which is almost always fresh Mahi Mahi that I just felt I have to tell you about it. I have never in my life had a better meal! Ever! Fresh Mahi Mahi with teriyaki suace on a bed of home made mash potato's with shoe string fried onions on top with fresh cut and perfectly cooked vegetables. My mouth waters at the thought and I can't stop thinking about it! Go enjoy!!!

The service is very professional. Presentation of food is artful, flavorful, and plentiful. We make sure we dine here more than once during our stays in Sayulita, just to order all our favorites! We are having them cater our wedding, can't wait!
