Sofia has been preparing gourmet food all of her life – “Food is my passion”

She looks forward to sharing her expertise and her wonderful meals with you in the privacy of your Sayulita Vacation Villa.

You may either choose from Sofia’s menus which include traditional Mexican meals with a gourmet flair of  Italian, Moroccan, Indian, Vegetarian and Vegan, or work with Sofia to create your own personalized menu.

Sofia is fluent in Spanish, English, French, and gourmet cooking.

MEXICAN MENUS

 


MEXICAN MENU # 1: FISH

APPETIZER: TOASTED PUMPKIN SEED DIP WITH TORTILLA CHIPS; a Mayan appetizer typical from the Yucatán peninsula, made with roasted tomatoes and spices, a very interesting blend of flavors, definitely worth trying!

 

MAIN COURSE: FISH FILLET IN CILANTRO PESTO; catch of the day topped with a mild spicy cilantro pesto, topped with avocado slices.

SIDE DISHES: please choose 2 from the list below.

DESSERT: GUAVA CHEESECAKE; a creamy cheesecake made with an aromatic tropical exotic fruit on a homemade cookie crumb crust.

MEXICAN MENU # 2: CHICKEN

APPETIZER: TOMATILLO SALAD WITH TOSTADAS AND CREAM; a traditional Michoacan state dish, a nice fresh chopped salad served over Tostadas with cream.

MAIN COURSE: CHICKEN ENCHILADAS WITH MANGO SAUCE; off the beaten path enchiladas made with a unique sauce of Achiote (a Mayan spice), mango and other Mexican ingredients. They can be spicy or mild.

SIDE DISHES: please choose 2 from the list below.

DESSERT: CITRUS COCONUT CAKE; a moist cake in which orange, lime and coconut blend very nicely.

 

MENU #3 FISH AND /OR SHRIMP:

APPETIZER: CUCUMBER CUPS WITH SHRIMP SALAD; stuffed cucumber slices with Mediterranean and Mexican flavors.

MAIN COURSE; FISH AND/OR SHRIMP WITH GINGER-ORANGE SAUCE; fresh catch of the day served with a very delicate ginger citrus sauce.

SIDE DISHES: please choose 2 from the list below.

DESSERT: FLOURLESS TEQUILA-CHOCOLATE CAKE; a truffle-like cake infused with tequila, served with fresh strawberries.

MENU #4 BEEF:

APPETIZER: TROPICAL GUACAMOLE; an exotic version of the classic with chunks of fresh mango OR pineapple, served with tortilla chips.

MAIN COURSE: BEEF PICADILLO; ground beef stewed with vegetables, almonds and a kick of chipotle chili.

SIDE DISHES: please choose 2 from the list below.

DESSERT: ORANGE CREAM CHEESE FLAN; a mixture between a flan and a cheesecake served with fresh fruit OR chocolate sauce on top.

MENU #5 CHICKEN:

APPETIZER: SHRIMP PATÉ; a smooth shrimp spread jazzed up with Mexican flavors, served with crackers. This is a traditional dish of Nayarit state.

MAIN COURSE: GREEN CHICKEN MOLE; a very unique dish made with toasted pumpkin seeds, tomatillos and Mexican spices, highly recommended! If you are adventurous, the pumpkin seeds can be substituted with pistachio nuts.

SIDE DISHES: please choose 2 from the list below.

DESSERT: LIME-COCONUT FLAN; topped with caramel.

MENU #6 FISH:

APPETIZER: TOASTED SESAME BEAN DIP; a creamy dip made with beans and toasted sesame seeds, served with tortilla chips.

MAIN COURSE: PECAN CRUSTED MAHI MAHI WITH MANGO PICO DE GALLO; fresh fillets coated with a yummy pecan crust and topped with a spicy mango pico de gallo salsa (if mangos are not in season, pineapple will be used instead).

SIDE DISHES: please choose 2 from the list below.

DESSERT: BANANA-RUM BREAD PUDDING; made with fresh bananas, topped with a caramel sauce.

MENU #7 PORK:

APPETIZER: GUACAMOLE; prepared in my own style with some secret ingredients, served with tortilla chips.

MAIN COURSE: PORK IN ACHIOTE SAUCE; this is a classic Mayan dish from the Yucatán peninsula, baked marinated pork in a flavorful red tangy sauce, served with pickled red onions. Very good in tacos too!

SIDE DISHES: please choose 2 from the list below.

DESSERT: COFFE-CINNAMON FLAN; topped with a caramel sauce

MENU #8 FISH:

APPETIZER: CUCUMBER SLICES WITH SHRIMP SALAD; stuffed cucumber slices with Mediterranean and Mexican flavors.

MAIN COURSE: FISH IN JUNGLE SAUCE AND CORN GNOCCHI: fresh catch of the day cooked with a green sauce made with exotic Mexican herbs (one of them is called HOJA SANTA or “sacred herb”), topped with homemade corn dough gnocchi. Very unique!

SIDE DISHES: please choose 2 from the list below.

DESSERT: MEXICAN RICE PUDDING; very creamy, infused with vanilla and cinnamon.

 

MENU #9 VEGETARIAN:

APPETIZER: MEXICAN SALSA FRESCA; also known as pico de gallo, served with tortilla chips.

MAIN COURSE: CHILE RELLENO SOUFFLE; the light healthy version of the famous chile relleno. Worth trying!

SIDES: RICE SALAD; made with brown and wild rice and a nice light dressing. SAUTÉED BROCOLI; flavored with lime and toasted almonds.

DESSERT: KEY LIME PIE; topped with fresh strawberries and fresh mint.

MENU #10 SHRIMP ENCHILADAS:

APPETIZER: ROASTED PUMPKIN SEEDS DIP; a Mayan classic spiced with Habanero Chili. Served with corn chips.

MAIN COURSE: SHRIMP AND SPINACH ENCHILADAS WITH TOMATILLO SAUCE; spicy and tangy, topped with melted cheese.

SIDE DISHES: please choose 2 from the list below.

CHOCOLATE CAKE WITH MOLE FROSTING; served with vanilla sauce a delectable combination of flavors.

If you want to interchange any side dishes from any menu it is possible, as well as for desserts. If you have any other request please let me know and we can work it out.

 

SIDE DISHES FOR MEXICAN MENUS (you may choose 2)

REFRIED BEANS: Either black beans or regular pinto or another similar variety, mashed beans with olive oil, light and healthy.

WHOLE BEANS: Slow cooked beans in a nice stew.

DRUNKEN BEANS: Slow cooked beans in a beer stew served with chopped onion, cilantro and Serrano chili, if desired.

CHIPOTLE INFUSEDE BLACK BEANS

RICE: Mexican red rice with tomato sauce and chopped veggies.

WHITE RICE: with fresh herbs.

POBLANO RICE; a green colored rice with Poblano chilies, very tasty!

MASHED POTATOES

SALAD: Fresh greens and seasonal vegetables served with one of the following homemade dressings:

-Honey Mustard vinaigrette

-Lavender dressing

-Chipotle vinaigrette

-Italian herb infused oil vinaigrette

SAUTEED SEASONAL VEGETABLES; sprinkled with fresh herbs or mild spices and olive oil.

MAIN COURSE: MAHI MAHI FISH FILLET WITH SPICES, TOMATO AND WHITE WINE SAUCE

Sofia came highly recommended by our cousins and we're so happy we were able to have her cook two meals for us. They were a highlight of our stay in Sayulita. Especially having a wonderful meal prepared the night we arrived at our Casa. What a great welcome and treat! She and her assistant brought all the food, prepared it, served it beautifully and left the kitchen spotless with leftovers packed up in the fridge. We loved everything but standouts were the Ceviche, Shrimp Enchiladas, and her Mayan Dip.

Delicious!
We hired Sofia and her staff to make food for our wedding reception. We had it at a private villa and Sofia was so accommodating. She helped us find a mariachi band and a bartender for the evening. While we had our ceremony, Sofia and her team set up the kitchen at our reception house and had everything smelling wonderful when we arrived. She was very sweet as were her employees. The food they all made was so good. Our whole family raved about it. My favorite was the carnitas. She also made us a cake that she decorated with strawberries to make it more appropriate for the wedding. That was so awesome because it is not easy to find a wedding cake in Sayulita! When we were finished, everything was cleaned, spotless, and all leftovers put in the fridge. Thank you Sofia for making our day so special.

Excellent meals
Sofia is wonderful! She made our stay so pleasant. We always looked forward to her meals and enjoyed them so much. She was great with our gluten free needs and very careful. To enjoy amazing thoughtful food from the comfort of our beautiful villa was a treat that will not be forgotten.

We were spoiled by the incredible Chef Sofia!!
I can't say enough good about Chef Sofia!! We were a large group of 18, and some of us had special dietary needs. She was incredible at finding and cooking the foods that were safe for those of us who could not eat gluten. Not only that, her food is fantastic and she has so many choices to choose from! I dream about her amazing guacamole!! She took a personal interest in us when some us came down with the dreaded Montezuma's revenge by sharing her personal supply of grapeseed extract that she can only find in the states. She also taught us the proper way to clean our fruits and vegetables so we could avoid further sickness. She speaks fluent English and is so sweet to be around. We just loved her, and our kids adored her. If we ever are back in Sayulita, we will definitely be hiring her again!!

OUTSTANDING!!!
Sofia is an AMAZING Chef, Organized, on time, with so many extras, where to begin my admiration for her joyful caring to detail and to actually being able to find us.
This was my Son's Wedding in San Poncho, down a long bumpy dirt road to a private beach,. She showed up with her trucks and cooked for 40 people, the most delicious Mai Mai, Flank Steak, chicken for kids, and Churro truck After the Chocolate cake!
The tables and place settings were magnificent as well.

One of the best meals I have ever had
Sofia visited us at our place in Sayulita on January 6, 2015 and treated us to a wonderful meal with delicious guava and classic margaritas. Sophia started us off with Shrimp Pate and it is the best thing I have ever had. She prepared it with all fresh ingredients and engaged us in a bit of history of the dishes she was making. We had a pork dish with rice and veggies (cannot remember the name of it but very good). There was even leftovers for the four of us to enjoy the next day. Every dish was made in front of us except the key lime pie - this is a must try - it was light, yet very delicious and a perfect ending to a great meal. I would highly recommend Sophia for any occasion, and we will defiantly have her make us a meal when we come back. Thank you Sophia one of our highlights of our trip. take care Heather

Wished we'd booked Sofia for ALL our meals!
Sofia is THE BEST. In addition to being a spectacular chef, she is conscientious and lovely. Our communication with her before our trip was easy and thorough. But nothing prepared us for her food. We hired her to cook three dinners -- two fish dishes and a chicken in green mole sauce. Wow. It was like eating at a great restaurant in the comfort of our home. Sofia made our trip to Sayulita!

Sofia is a magician!
She was the icing on the cake of our wonderful family vacation in Sayulita. I'd read the reviews and so expected something wonderful . . . . but somehow she exceeded even those words of high praise. Don't know how she does it, as we were in Sayulita at the busiest time and when she also was providing food for a wedding. I would say don't miss this or that which we chose from her menu, but clearly from other reviews, all her food is fantastic. Wish we could have engaged her for more dinners, but she is much in demand. She did do two evenings of drop-off meals for us, and although we missed her lovely presence, the food was up to the same high standard. She definitely is at the top of our list of reasons for why we would love to return to Sayulita!

Phenomenal chef that gave us the wedding of our dreams!
We are so grateful that we used Sofia and her amazing team to cater our 50 person wedding. From day one Sofia was a delight to work with. She clearly communicated with us via phone and email which lowered our stress and gave us confidence in her abilities. Sofia met with us a few days before the wedding at the venue to review everything and from that point on she took complete responsibility and charge! She arranged fabulous bartenders and servers and even organized our rentals for us. When the rentals had not arrived on time she was quick to deal with the company and even came by to ensure that everything was ok. On the day of the wedding Sofia and her team worked away in the kitchen quietly and efficiently. The kitchen was completely visible from the reception area and we barely noticed they were there. The meal was perfection! The appetizers, mains, sides, and desert were out of this world. Her mahi mahi recipe is absolutely to die for. Our guests claimed it was the best meal of their lives. Following the meal her team cleaned up quickly and quietly and disappeared while the party continued. While her food is outstanding it is her calm and kind personality that makes working with her a dream. I was 100% confidence that everything was going to run smoothly and it did. I would HIGHLY HIGHLY recommend Sofia to cater your event.
