Taste of Sayulita is a local company that officially launched in September of 2020 and offers customized tasing experiences right to your home. Private agave distillate tastings, private bartending services and small event coordination are also available with Taste of Sayulita.
Taste of Sayulita is locally owned and operated by David Vergara and Hailey Corr. David first came to Sayulita in 2000 to visit his sister, who is a long-time resident of Sayulita. He fell in love with the chill vibes, kind people, and fun nightlife and in 2014 he decided to pack up his car, leave the big city and drive straight to our lovely seaside pueblo. David's wife, Hailey Corr, is originally from Colorado. Hailey moved permanently to Mexico over 11 years ago and has lived all over the pacific coast. Her love affair with Mexico was sparked by her maternal grandmother, a graduate of UNAM in Mexico City and was a well-known tour guide of Mexico in the ’50s and ’60s.
This business was inspired by David's passion for his culture and the art of making agave distillates. After years of working, managing and entertaining locals and tourists in many famous bars here in Sayulita, David found that he loved the process of how tequila, raicilla and mezcal were made. He is fascinated with the mythology and origin stories that surround the use of the agave plant to make "nectar of the gods".
Hailey and David specialize in tastings and stand out due to the quality of the alcohol we use, the in-depth knowledge we provide and the delicious bites that allow our clients to truly feel as if they've been immersed in Mexican culture through food and drink. Guests can expect to learn a LOT about the distillate they choose, eat delicious food and have a lot of fun while doing it.
When you do a tasting with Hailey and David, you become best friends with Hailey and David. When they were in the process of planning their wedding, they would end each tasting by inviting their clients to the afterparty of their wedding (not thinking anyone would actually come). Not only did a group of 4 previous clients come back for the afterparty of their wedding but they also came to the welcome party!
Taste of Sayulita is very proud of the fact that all of our tastings are done with organic spirits from small family-owned producers. This provides you with the most authentic experience while also supporting small artisanal operations throughout Mexico.
What differentiates TOS is the quality of artisanal spirits served, the authentic cuisine that is served at all tastings, and the fun that is had at every tasting.
David has been in Sayulita since 2014 and loves that Sayulita is such an international town where he has made lifelong friends from all over the globe, including his wife who he met in April of 2019 while working at Cava, a local mezcaleria. Hailey has lived in the Bahia de Banderas since 2013 and loves how the tight knit community of Sayulita embraces people who visit. She specifically loves to explore the jungle that surrounds Sayulita.
Hailey and David will continue to search Mexico for the best quality of organic spirits from small family-owned producers (we just added a new mezcal from Durango to our Mezcal catalog) and will be bringing a walking tour called "Live Like a Local" to our menu of experiences in April of 2022.
