In my last column I told you that I was going to make Martha Stewart’s Butter Ring Cookies. Well, I did make them, but surprisingly they were NOT my favorite. However, I did make a savory dish this week that I totally loved: shrimp scampi. The shrimp were so succulent that I had to share this recipe with you. This is the perfect dish to prepare in your Sayulita kitchen because the prep and cooking can all be done on a stove top! Honestly, if I had been served this dish in a high-end restaurant I would have been raving about it.

Dear community of Sayulita, we are in need of more people to renew memberships, become members, or to donate to general funds for GrupoPro Sayulita. As you may already know, GrupoPro Sayulita is a non-political, duly-registered and federally-recognized Mexican non-profit association that was founded by concerned citizens committed to enriching the quality of life for all in Sayulita. GrupoPro Sayulita exists on the fundamental elements of making Sayulita a clean, safe, and exciting village to live in. With the help of volunteers, donations, and the hard work of GrupoPro Sayulita's members, institutions such as the police, the firefighters, the recycling center, and the lifeguards are able to exist in Sayulita.

By now, I am hoping many of you have already heard about our new creative and cultural center. If not, there are no more excuses! The first official event of El Centro will be on December 6th, 2018, at Manuel Plasencia from 6:00-9:00 p.m. Remember where Festival Sayulita has its concerts? That’s the place! The lovely Quinta Trujillo property is the home of El Centro and where the event will be held. The event will be a perfect opportunity to get to know El Centro and all the associated activities. The evening will feature a Recycled Art Show; all of the proceeds from the event will directly benefit El Centro by going toward funding its classes and services. Demonstrations during the show will include the glass cutting area, the newly built plastic shredding machine (yes, we can now recycle plastic!), the welding program, and lots of information about the language programs and children’s workshops.

We (the owners & operators of Escuela Cooperativa) have been coming to Sayulita for almost ten years, and quickly fell in love with the town and its warm and welcoming residents. We wanted to give back to the community, so we started asking about opportunities for how to do so. Education has always been a priority for us, and we soon learned there was a real need for a tuition-free preschool for local children here in Sayulita. Thus, in 2016, we started holding community meetings at the cultural center to see if local families were interested. At each meeting, more parents came and brought their friends. They were very enthusiastic and shared their priorities with us. They asked many questions, and soon we had a registration list of 15 families ready to start in August of 2017.

An interview with Giorgio Capirone, owner and manager of MeQuiero Boutique. Giorgio, what is MeQuiero design? "MeQuiero is a boutique-style shop catering to both tourists and locals. We sell souvenirs and/or comfy clothing, like pants and Bermudas made with a particular type of fresh and simple cotton that are specially made for living in a hot and humid climate. They are of 100% Mexican origin and have a colorful design that will inevitably make your mind think back to the lovely streets of our Pueblo Magico, Sayulita. In the future we would like to let our MeQuiero designs roam and explore the rest of Mexico too, and possibly even abroad outside of Mexico."

Hotel Paraiso is one of the newest hotels currently being built in Sayulita. With a growing number of construction projects in Sayulita on hotels and tourist accomodations, at times it can feel as though our small Pueblo is shrinking and becoming overpopulated with similar buildings and infrastructure. Hotel Paraiso, however, is incredibly unique in its concept and vision, and is a hotel that will positively benefit our community. I speak with the owner, Alejandro, about the hotel and its unique qualities which make it stand out in Sayulita.

I have been cooking and baking yummy food for so long now, and there are so many tips I have learned through the years that can help make your cooking and kitchen tasks much easier. I thought that sharing some of my tips would make for an interesting column. There are many books out there that have “pro-tips” on cooking and baking; these are the ones that I have found most useful for the everyday cook. In Sayulita, we love to live and play outdoors as much as possible, so any tips that can help make our food easier to prepare is welcome! As Martha Stewart says, “it’s a good thing!”

SayulitaFit, Sayulita’s first fitness and athletic club is finally opening today, November 12th, 2018, and it has been the talk of the town since word of its opening first began to spread around our pueblo. With major excitement growing about this gym, I talk with the owner Josh Serrano about the services and fitness classes that will be provided, and why SayulitaFit is filling a need in this community that previously has been unmet.
