Have you ever eaten or made fish “en papillote”? I hadn’t until a recent trip to Tonela, where just by luck we happened upon a restaurant that had it on the menu! I fell in love with the wonderful, delicate, and flavorful fish so much that we went the next day so that I could order it again. I had to figure out how to be able to make this dish at home in Sayulita so that we could enjoy it. I was delighted to find out that this is one of the simplest meals to make, and can be prepared with a nice filet of white fish or even salmon. No need to turn on a hot oven in our humid Sayulita climate. This fish cooks beautifully on your barbecue or grill—a perfect meal on a hot Sayulita summer day.

From the moment that you walk into OZean Grill & Bar in Sayulita, you feel that open, relaxed, and friendly vibe that you would expect from a surf town like Sayulita— a perfect mix between ambiance, architecture and service that reflect as a preamble to the dishes that you are going to experience at this beautiful location. Starting from the second that you are walking towards your table, you find yourself facing the crystal wine cellar full of top-quality wines from around the world. When you sit at your table you can feel the gentle breeze coming from the fans surgically positioned around the restaurant, so you forget about the heat outside. You then take a deep breath and look upwards to find the beautiful, over-sized wooden chandeliers hanging from the glass ceiling 10 meters above you; based on these impressions, you know that the food that you will experience at OZean Grill & Bar in Sayulita is going to be anything but average.

SPATCHCOCK CHICKEN you say!? What does “spatchcock” mean to us home cooks? "While the indirect grill and rotisserie methods are great for roasting a whole chicken, nothing can beat the flame-charred smokiness of chicken pieces grilled directly over a fire. There is a way to do this and I learned it in one of the world's most unlikely barbecue destinations: Paris. The technique is spatchcocking and it looks as theatrical as it sounds. You cut out the backbone and open the bird flat, like a book. This makes the whole chicken thin enough to grill directly over the fire." —Steven Raichlen, “How To Grill”

Have you ever looked at a label of an item at a grocery store and read the list of ingredients? How surprised were you by all of the names that you did not recognize? All too often, we see ingredients in our food that sound like something you’d use in a chemistry lab experiment. These same foods with ingredients we can’t even pronounce sometimes end up on menus in restaurants. However, at Veggie Land, one of Sayulita’s newest restaurants which opened in 2017, you can be assured that all of the ingredients used in their menu are natural, real, and fresh. At Veggie Land, they use simply wholesome, healthy, and raw ingredients combined with local produce to create healthy dining options for our community of Sayuilta.

Pizza has always been my favorite go-to food when I want something special, so I absolutely needed a Ketogenic Friendly Pizza Crust. I have already given you a Cauliflower Crust Recipe, and I really like it, but I have recently found my perfect crust. Tastes so much like the real deal! Although a weird name, in my opinion (it's called a Fathead pizza crust), I decided to give it a try, and I am more than happy that I did. It is fantastic; thin, crispy, easy to make, and to top it off, this crust tastes delicious! Your Sayulita family and friends will be shocked when you tell them that this is a wonderful low carb treat.

This is the no carbohydrate Foccacia Bread in which I have been raving. Since I have been following the ketogenic lifestyle, the thing that I have been missing the very most is good bread! Well, stop the clocks! This focaccia recipe satisfys all my cravings for good bread. It is so delicious and is very surprisingly easy to make in your Sayulita kitchen. Take it to your next potluck dinner and get the rave reviews that I have been talking about!

“It’s meant to be more of a Mexican fondue-style experience. Not one to be rushed through. One to sit back, relax, and enjoy quality time with others,” said Charlie, owner of Tierra Viva, about the tequila and tapa pairings now being offered at his popular Sayulita restaurant. As I soon found out, Chef Victor and Bar Manager Martin are ingenious when it comes to pairing desirable, high quality tequilas from the region of Tequila, Jalisco with fresh, mouthwatering tapas.
