Yes, it can be more work than preparing your standard or regular bacon and eggs on a lovely Sayulita weekend morning, but I love this recipe so much that I don\u2019t mind the extra couple of steps it requires to make. All the ingredients for this breakfast burrito are readily and easily available in almost all of our <\/span><a href=\"https:\/\/www.sayulitalife.com\/alasblancas\"><span style=\"font-weight: 400;\">Sayulita tiendas<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><b>INGREDIENTS:<\/b><\/p>\n<p><span style=\"font-weight: 400;\">-12-16 strips of bacon <\/span><i><span style=\"font-weight: 400;\">(the amount will depend on how big you want your burrito to be. Are you serving 2, 4 or more?)<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">-3+ eggs <\/span><i><span style=\"font-weight: 400;\">(again depending on how many people you are serving. I think it is best to make 2 smaller burritos rather than 1 big one. It will be much easier to handle a smaller one.)<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">-1\/4 -1\/2 cup of your favorite grated cheese. <\/span><i><span style=\"font-weight: 400;\">(I love the Manchego de Cabra, a wonderful grating cheese that Mega usually carries.)<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">-Salsa verde<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-Mashed avocado or guacamole<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-A fresh herb such as basil, minced<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-Sour Cream <\/span><i><span style=\"font-weight: 400;\">(I like to use Lala\u2019s most delicious crema, which can be found at <\/span><\/i><a href=\"https:\/\/www.sayulitalife.com\/alasblancas\"><i><span style=\"font-weight: 400;\">Alas Blancas Tienda<\/span><\/i><\/a><i><span style=\"font-weight: 400;\">.)<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">-Salt and pepper to taste.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-Butter<\/span><\/p>\n<p><b>METHOD:<\/b><\/p>\n<ol>\n<li><span style=\"font-weight: 400;\"> Heat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Lay 6 slices of bacon side by side.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Fold every other strip of bacon in half onto itself and lay one strip of bacon in the middle vertical to the folded strips. Unfold the strips back over the vertical strip of bacon, and continue until all the strips have formed a nice lattice <\/span><i><span style=\"font-weight: 400;\">(see photos)<\/span><\/i><span style=\"font-weight: 400;\">. The bacon lattice should have an equal number of horizontal and vertical strips.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Bake until nearly cooked, but still very pliable. <\/span><i><span style=\"font-weight: 400;\">(This should take about 15 minutes.)<\/span><\/i><\/li>\n<li><span style=\"font-weight: 400;\"> Slide the bacon lattice onto a paper-towel lined plate, and allow it to cool for 10 minutes.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Raise the oven temperature to 450 degrees F.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Scramble the eggs in a medium to large sized mixing bowl with salt, pepper, and your fresh herb, such as basil.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Melt butter into a small saut\u00e9 pan and add the eggs; cook the eggs until just barely done.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Add the grated cheese and scramble it into the eggs just until the cheese melts.<\/span><\/li>\n<\/ol>\n<p><b>ASSEMBLY OF THE BURRITO:<\/b><\/p>\n<ol>\n<li><span style=\"font-weight: 400;\"> Pile eggs across the center of the bacon weave; top with salsa verde and the avocado\/guacamole.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Roll up the burrito fairly tightly.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Return the burrito to the hot oven, and cook until the bacon crisps.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Cut in \u00bd and serve.<\/span><\/li>\n<\/ol>\n<p><span style=\"font-weight: 400;\">I know that you will LOVE these as much as I do!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I am not available for catering until November but if you have any comments or questions please contact me through my web page <\/span><a href=\"https:\/\/www.sayulitalife.com\/live-love-eat\"><span style=\"font-weight: 400;\">LIVE, LOVE, &amp; EAT IN SAYULITA<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I LOVE HEARING FROM YOU!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I recently discovered how to always make juicy burgers.
