I discovered that jicama, available in almost every tienda here in Sayulita, makes the most delicious French Fries! Thus, I am no longer having cravings for a good batch of crispy fries. These jicama fries are really simple to make; I highly recommend that you try them. Serve them with mayo on the side for a tasty dip. Let me know how you like them!<\/span><\/p>\n<p><b>INGREDIENTS:<\/b><\/p>\n<p><span style=\"font-weight: 400;\">-One fresh jicama<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-\u00bc cup olive oil<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-One dash of cumin, garlic powder, and paprika<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-\u00be tsp of salt and fresh ground pepper<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-A side of mayonnaise <\/span><\/p>\n<p><b>DIRECTIONS:<\/b><\/p>\n<p><span style=\"font-weight: 400;\">-Preheat your oven to 400 degrees, and line a baking sheet with parchment paper.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-Peel jicama, and then slice into \u201cFrench Fries\u201d or similar type of pieces- not too thick because you want them to be crispy.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-Place peeled and sliced jicama into a pot with water, and boil on stove for 15 minutes.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-Remove from heat, and drain in a colander.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-Pat dry, and then coat well in olive oil and seasonings listed above.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-Lay the coated jicama pieces out individually on prepared baking sheet. Leave a bit of room separating them; if they are all touching they will steam rather than crisp.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-Bake for approximately 55 minutes or until they are nice and crispy. <\/span><i><span style=\"font-weight: 400;\">(*For the last 10 minutes I turned my oven up to 450 degrees to help crisp them more.)<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">-Let sit for 2-3 minutes, and then serve with mayonnaise as a dip.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">YUMMY! Honestly, I can\u2019t believe how great these are. My French Fry longing is long gone!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I am thinking that my next column will be Mexican Chorizo Meatball Tortas. They sound so delicious.
