Karina's Almond Stuffed Dates in SayulitaHave you ever gone to an appie party and found that yours was the first to be devoured? I promise you that this is likely the case for Almond Stuffed Dates Wrapped in Bacon. These are almost always on my party planning list and are perfect for your next Sayulita party or potluck! Delicious and easy to make with only three ingredients!

INGREDIENTS:

1. Good quality soft pitted whole dates

2. An equal amount of raw almonds -  Many of the tiendas in Sayulita sell them or you can buy them at our Friday Sayulita Mercado del Pueblo.

3. Very thin slices of bacon. I like the FUD brand of bacon - it has perfectly thin slices and our tiendas here in Sayulita sell it. Cut each slice into three pieces.

ingredients for almond stuffed datesPREPARATION:

-Stuff a whole almond into date and snugly wrap your 1/3 of a slice of bacon around each stuffed date.

-Bake on parchment paper lined baking sheet at 400 degrees for approximately 15 minutes, until bacon is crispy.

-Drain on cooling rack lined with a sheet of paper towels.

-Serve piled up on a tray and decorate with pretty flowers for a great presentation. You might remember that I told you before that food tastes much better when it is beautifully presented... beauty and taste buds are in the eye of the beholder!

Please check out my next column. It's another of my favorite appies - Jalapeño Cheese Biscuits. My mouth waters just thinking about them.. spicy and flaky. Yummmm!
