In Arabic, the word shawarma (شاورما) means “turning” or “rotated,” referring to the way the meat slowly spins on the vertical rotisserie. Shawarma emerged during the Ottoman Empire in the 18th–19th century as an affordable and nourishing meal for workers. Over generations, it became a beloved Middle Eastern staple. Each region made it its own: in Turkey, it evolved into Döner Kebab, in Greece into Gyro, and in Lebanon into the classic chicken or beef-and-lamb Shawarma served with vibrant toppings and sauces. In the mid-20th century, Lebanon added a now-essential ingredient to chicken shawarma: French fries.
When Lebanese immigrants arrived in Mexico in the early 1900s, they brought shawarma with them, carving it into tortillas to create Tacos Árabes.
