Destilería Cerdo Negro in Sayulita is the first and only distilery in Sayulita. Established in 2014 and legal in 2018, Destileria Cerdo Negro has become very well known locally and from afar over the past 6 years.
Everything at Destilería Cerdo Negrohas been built by hand with the attempt at using local ingredients and local labor, which kindly enough sometimes, worked for whisky. I hope that you enjoy the final product as much as I’ve enjoyed making it.

Destilería Cerdo Negro in Sayulita is located just a few minutes walk from downtown Sayulita in the Tamarindo neighborhood (see map), tastings and tours and orders are available by appointment. You can also find Destileria Cerdo Negro products available at The Friday Farmer's Market from 10am - 2pm every week.

Cerdo Negro Sour Mash Whisky:
Modeled after some of the great sour mash bourbon whiskies but distinctly Mexican. Made with native Mexican corn, distilled twice and aged at sea level in new American Oak barrels. Jabali Ginebra (Gin)
Using the Mexican sourced botanicals Hibiscus and Tamarind, Jabali Ginebra captures the freshness of both the surrounding jungle and the ocean. A perfect relief from the near omnipresent heat and humidity. With tonic water and a slice of lime, in a martini or chilled and served in your favorite cocktail, the distinctive taste of Jabali Ginebra will come as a welcome escape however you choose to enjoy it.
