jalapeno cheese biscuitsEveryone loves to eat appies at parties. They have become one of my specialties and Jalapeño Cheese Biscuits is one that everyone loves! Take these to your next Sayulita party and I guarantee that you will receive rave reviews! They are my #1 favorite to make and to eat! 

INGREDIENTS

-2 cups flour - I always use organic flour

-4 tsp baking powder

-Pinch of sugar 

-1⁄2 tsp salt

-1 medium size jalapeño - chopped into approximately 1/8” dice. Only remove seeds if you do not like it too hot. 

-8 tablespoons unsalted butter - frozen and grated - I love the unsaled butter in Mexico. It tastes very much like the cultured unsalted butter in Europe. 

-3/4 cup Lyncott whipping cream

-4 ounces grated sharp flavored cheese

-SIFT together into good sized bowl bowl 

-ADD butter  

*Whenever you are baking something that will be flakey, the butter must be very cold. Because it is so hot and humid in Sayulita, I have discovered that freezing the amount required for the recipe and then grating it on a large hole grater keeps the butter very cold. It is then easy to incorporate into your recipe.

By immediately COMBINING the grated butter with the flour, it does not melt on you! You must have your ingredients all ready to go; have oven preheated to 425, and bake as soon as formed.

-ADD whipping cream (crema para batir). It can be found in many Sayulita tiendas OR crema. I love using the crema in Mexico. It is so rich and flavorful. My favourite brand is Lala. Pretty much every tienda in Sayulita carries it.

-ADD grated sharp flavored cheese - cheddar is sold all around Sayulita in many tiendas. I personally love the goat cheese Manchego that you can find in the specialty cheese section of Mega in Bucerias, which is about a half hour from Sayulita. 

-ADD chopped Jalapeno 

-GATHER together into dough and then KNEAD for 30 seconds

-PAT out 1” thick on floured board

-CUT into hearts (my favorite) because I LOVE, rounds or triangles 

-BAKE at 425 degrees until puffed and golden - about 15 minutesTo ensure that your result is crispy, place each biscuit at least 1” apart.

These buscuits may be served at room temperature. Be sure to make a lot  because they will go very quickly at your Sayulita party!
