I have been cooking and baking yummy food for so long now, and there are so many tips I have learned through the years that can help make your cooking and kitchen tasks much easier. I thought that sharing some of my tips would make for an interesting column. There are many books out there that have “pro-tips” on cooking and baking; these are the ones that I have found most useful for the everyday cook. In Sayulita, we love to live and play outdoors as much as possible, so any tips that can help make our food easier to prepare is welcome! As Martha Stewart says, “it’s a good thing!”

SayulitaFit, Sayulita’s first fitness and athletic club is finally opening today, November 12th, 2018, and it has been the talk of the town since word of its opening first began to spread around our pueblo. With major excitement growing about this gym, I talk with the owner Josh Serrano about the services and fitness classes that will be provided, and why SayulitaFit is filling a need in this community that previously has been unmet.

Hola to the community of Sayulita- surf shops, photographers, wedding planners, stores, restaurants, and local residents: WE NEED YOUR HELP! The Lifeguard Tower Go Fund Me campaign will soon end, and we are still seriously underfunded for the final stage of the Lifeguard Tower Project. As you know, we are nearing our busy season here in Sayulita, and building this last lifeguard tower is essential to keep our beaches and many visitors safe. This is your chance to help chip in! Sayulita Life, Mexhome, and Hotel Vogue all have already generously donated to the cause; Sayulita Life graciously gifted $200 USD toward the project.

Sundaram Suites, a new vacation rental in San Pancho, Nayarit, is just a ten minute drive away from our town of Sayulita. With a prime jungle location, one block from the beach, luxurious accommodations, and conscientious and caring staff, Sundaram Suites seems to be an excellent choice when deciding where to stay on your next vacation to the area. This rental is unique not only in its design, but that it is for adults only, with a minimum stay of six nights. I talk with Abraham and Felipe, the owners and operators of Sundaram Suites about their dedication and vision for their vacation rental. It is very clear that that the two not only have extensive experience and expertise in the hospitality industry, but that they are passionate about the work they do in helping curate the perfect vacation for their guests.

I love salads and have one every night with my dinner. Sometimes I feel like a rabbit! No matter what is planned for my menu, I always have a salad along with my meal. Today I would like to share a recipe for a Cobb Salad. This particular salad can be had as a full meal on its own, and it is one of my favorite meals because it is both filling and healthy. Additionally, on our hot and humid days here in Sayulita, a fresh, cold salad is always a great option for lunch or dinner. With chicken, bacon, eggs, avocado, blue cheese, fresh organic salad greens, and a delicious homemade vinaigrette, who could ask for anything more? Furthermore, all of these ingredients are easily available here in our Sayulita tiendas.

Eric Miranda is the newest tattoo artist to arrive at Chops’ famous tattoo studio here in Sayulita, Papillon Family Studios. Originally from both Los Angeles and Vancouver, Eric has a lot of experience and knowledge in both art and design, as well as travel and culture. Although Eric may be a fresh face around here in Sayulita and in the tattoo world in general, his work is that of an experienced and seasoned artist. Eric tells me about what brought him to Papillon Family Studios in Sayulita, his background in tattooing, and what he loves most about his craft. It is safe to say that this is essentially a love story in many ways.

Cruising the colorful, cobblestone streets of Sayulita? Leave the car behind, and take a Nava Golf Cart instead! Coming from other countries to visit Sayulita, we're often not used to the sight of golf carts buzzing around town on the roads. However, the novelty of this convenient and eco-friendly way of transport is appealing and part of what gives Sayulita its relaxed, fun, and small town charm. Who doesn't want to hop on their own golf cart heading to the beach, and feel the soft Sayulita breeze through your hair? Venture out into Sayulita's picturesque streets with ease, by renting a golf cart through Nava Golf Carts. The golf carts will be dropped off when and where requested, while one of Nava Golf Cart’s enthusiastic and bilingual employees will personally take the time to show you how to use and plug them in, no matter how late you may arrive from you flight.

I love burgers- whether ground-beef, pork, chicken, turkey, or a combination of any of these, they are always delicious and satisfying. The other day I was on the Food Network site and saw a recipe for Guy Fieri’s “Stuffed Burgers”. The filling of crispy bacon and sautéed chorizo and onions sounded so good that I just had to make them last night! The combination of sautéed onions and chorizo sounded perfect for us in Sayulita! They were so delicious, that I had to share the recipe with you today.

Today I am making Roasted Kale and/or Swiss Chard with Feta. If you read my last column, I talked about Jen Segal from the blog and cookbook “Once Upon a Chef.” Jen has wonderful recipes; everything that I have made of hers has been delicious. I have adapted her recipe a little bit by adding kale to mine. Terrenal Organic store in Sayulita will likely carry organic chard and/ or kale by November, but please check with them first. Mega in Bucerias also usually carries both. Furthermore, you can find kale during high season at the Mercado del Pueblo. Thus, you can make this yummy vegetable dish in your Sayulita kitchen pretty much anytime you would like!
