On these “colder” days we’ve been having in Sayulita, have you sometimes felt like the only thing you want to eat is a nice, warm soup along with a yummy bread? Well, last week that was exactly what I felt like making, and then I of course devoured it with delight! Roasted cauliflower and garlic soup with parmesan and a yummy cornbread with honey-butter hit the spot! I enjoyed it so much that I just had to share the recipe with you. This past week I had a catering order in Sayulita for a special birthday cake. The husband wanted a vanilla cake with a buttercream frosting and said that if I could make it for him, he would be a hero in his wife’s eyes, as it was her birthday. I had never made either a vanilla cake, nor buttercream frosting before, but decided to give it a go! After lots of research the result was a most delicious cake. I was very proud of how yummy and beautiful this cake turned out, and I knew that I just had to share it with you here today. A friendly warning: the French buttercream icing I made uses a lot of butter...after-all, the icing is called BUTTERcream for a reason. I realize that this recipe may be a bit complicated for many of you, but I can guarantee that if you do make it, you will thank me!

Have you ever tried baking when the humidity is very high? Many recipes come out just fine, but many other recipes just won’t work! Today I had one of those “just won’t work” attempts. I really wanted to make Cheese Gougeres (French cheese puffs), but the humidity of 95% got the best of me, or shall I say, got the worst of me! The cheese puffs simply would NOT puff up. Thus, I was scrolling through some of the recipes I had saved that I knew would work…humidity or not. Lime Mousse is such a wonderful and refreshingly light dessert, I knew I had to make it! I chose lime rather than lemon, because limes are a basic staple in every Sayulita tienda. The result was so yummy, I knew that I just had to share the recipe with you. I am hoping that you love it as much as I do; this could be the perfect treat to enjoy with your loved ones on this Valentine’s Day!

Some of you maybe helped financially by donating to the cause, some of you did physical work on the towers themselves, and others were supporters on an emotional level (particularly for me)! Feature Post CVIS Students Team Up With Las Mujeres de Sayulita To Ban Plastic Bags

Las Mujeres de Sayulita is a growing and powerful group of women in the Sayulita community working together to bring environmental awareness and action to our Pueblo Magico. Many stores in the community as well as our neighboring areas such as Punta de Mita are already implementing the “no more plastic bag” idea, but more work is needed in order to spread awareness, and help reduce plastic waste. The Mujeres’ first and recent project as a team was to reduce the use of plastic bags in our community, and it has proven to be a large success. Working in coordination with the 9th grade students at Colegio Costa Verde school, they have helped to reduce the amount of plastic bags used in Sayulita by providing a program for reusable canvas bags, and a plan for how the local stores and tiendas can use them.

Ruben’s Annual Ranchero Fundraiser Party was a huge success again this year! The Ranchero Party at Ruben’s ranch is an absolute blast, and each year is greatly looked forward to. The party supports the amazing organization Grupo Pro Sayulita, which helps our community in many wonderful ways. The party was on Wednesday, January 23rd, 2019, and was very well attended. All proceeds from the ticket sales go directly back into our community by aiding the various projects of Grupo Pro Sayulita that help make our Pueblo Magico a better place

After retiring and venturing off to Mexico on a sailboat, she first came to Sayulita when her grandson expressed a desire to learn to surf. Since then, Barbara fell in love with this community, her daily walks to the beach, and watching the surfers. Now a long-time resident, she has found many people that she enjoys and has built strong friendships, all of which have given her the desire to get involved in helping her community by giving back to our local public schools.
