Aguachile Fest is Coming to Sayulita!

Spice lovers, assemble. Sayulita’s first big Aguachile Fest is set to bring the heat—think zesty limes, fresh shrimp, crunchy tostadas, and bragging rights for the best aguachile in town. Bring your friends, bring your appetite, and bring your thirst for a little picante party on a rooftop with a view.

What is Aguachile?

Born in Sinaloa on Mexico’s northwest coast, aguachile (literally “chile water”) is a fresh, fast-cured dish traditionally made with raw shrimp “cooked” in lime juice, tossed with chile (often chiltepín or serrano), red onion, cucumber, and cilantro, and served on tostadas. It likely began inland with chiltepín and water as a simple marinade and evolved on the coast with shrimp; today you’ll see vibrant styles—verde, rojo, even negro (with soy/Worcestershire), plus variations with scallops, fish, or octopus. The common thread: bright, spicy, ultra-fresh.
