Many of you may remember when I started my journey last year at the beginning of the school year at Primaria Damian Carmona in Sayulita. With your help and donations we have accomplished many things; 70 new desks were purchased, the lunch area roof was repaired, a wash area was constructed, plastic dishes were purchased, disposables were eliminated, flood lights were purchased and installed, the exterior wall was beautifully painted, small plumbing and electrical repairs were made, rubber mats for the bathrooms were added, 2 AC mini split units were donated, and the latest fundraiser will be used to repaint the entrance archway and fix one of the PE areas.

If you haven’t sprawled out beside a golden sand beach with a delicious margarita in hand while watching the waves roll in, have you even enjoyed your holiday in Sayulita? Today I met one of Mi Chaparrita Beach Club's enthusiastic team members, Lesley, at one of my favorite places to hang out and enjoy the beach. We settle in beach chairs, an ice cold cerveza in our hands, overlook the beginner surf break, and chat away.

Pizza has always been my favorite go-to food when I want something special, so I absolutely needed a Ketogenic Friendly Pizza Crust. I have already given you a Cauliflower Crust Recipe, and I really like it, but I have recently found my perfect crust. Tastes so much like the real deal! Although a weird name, in my opinion (it's called a Fathead pizza crust), I decided to give it a try, and I am more than happy that I did. It is fantastic; thin, crispy, easy to make, and to top it off, this crust tastes delicious! Your Sayulita family and friends will be shocked when you tell them that this is a wonderful low carb treat.

The sun was just starting to cast shades of orange and pink in the sky at 7:30 a.m. last Tuesday, and the beach was void of people, a rare sight in Sayulita. An epitome of tranquility, waves softly lapped the panga, as Jorge, owner of Sayulita Kayak and Surf Fishing Tours, navigated the small boat out to sea for a day of fishing!

This is the no carbohydrate Foccacia Bread in which I have been raving. Since I have been following the ketogenic lifestyle, the thing that I have been missing the very most is good bread! Well, stop the clocks! This focaccia recipe satisfys all my cravings for good bread. It is so delicious and is very surprisingly easy to make in your Sayulita kitchen. Take it to your next potluck dinner and get the rave reviews that I have been talking about!

“It’s meant to be more of a Mexican fondue-style experience. Not one to be rushed through. One to sit back, relax, and enjoy quality time with others,” said Charlie, owner of Tierra Viva, about the tequila and tapa pairings now being offered at his popular Sayulita restaurant. As I soon found out, Chef Victor and Bar Manager Martin are ingenious when it comes to pairing desirable, high quality tequilas from the region of Tequila, Jalisco with fresh, mouthwatering tapas.
