Born from a serendipitous love story and an adventurous spirit, Rollado brings a fresh twist to traditional desserts with hand-rolled ice cream wrapped in colorful waffle “tacos.” We sat down with the creator behind this playful pink cart to learn more about their journey, inspiration, and how they’re scooping joy into every cone.

1. Let’s Start with You…
Can you tell us a little about yourself and what brought you to Sayulita?
Rollado was born out of a love for travel and one unexpected, life-changing trip. In 2016, I came to Sayulita on a solo adventure and met my life partner here. That moment shifted everything. Together, we traveled to Colombia, where I first discovered hand-rolled ice cream—and I was instantly hooked. I couldn’t stop thinking about the concept. I knew I wanted to bring it to Mexico and make it my own creation by adding the wrapped-up-in-a-Mexican-style-waffle “taco”.
If I hadn’t met my partner here, I might never have ended up calling Sayulita home. But love brought me back, and everything aligned. This town has an undeniable magic, and it felt like the perfect place to begin again and build something from the heart.
What inspired you to start this business here?
Sayulita is where my love story began—both personally and creatively. My partner had roots here, and through him, I discovered the pulse of this town: its energy, its creativity, and the warmth of its people. It’s a place that sparks imagination and welcomes reinvention. I knew it was the ideal setting to bring a playful, feel-good concept like Rollado Ice Cream Tacos to life.
What’s something most people don’t know about your story or journey?
Before Rollado, I explored all kinds of ventures—I’ve always had an entrepreneurial spirit and a desire to create my own path. I launched an e-commerce backpack brand, worked as a lash lift technician, and spent seven years in commercial fishing. But everything shifted in 2017 when I was diagnosed with rheumatoid arthritis. The pain was severe, and I had to walk away from the physically demanding world of fishing. I spent several years unable to work, on disability, unsure of what the future held.
Eventually, with time, treatment, and healing, I went into remission. That second chance sparked something in me. I knew I wanted to build something meaningful—something rooted in creativity, joy, and connection. That’s when Rollado came to life.
I don’t have a traditional culinary background, but this business was built on passion, self-learning, and a whole lot of heart. From the cart design to the concept to every hand-rolled ice cream taco, everything was created with care and purpose.
Living with a chronic condition still has its challenges, but it’s made me more present, more grateful, and more driven to make each day count. Rollado isn’t just a business—it’s my comeback story.

What makes your business unique in Sayulita?
Rollado is the only hand-rolled ice cream taco vendor in town. We use quality ingredients and deliver a dessert that’s part show, part treat, and pure joy. It’s something playful, eye-catching, and one-of-a-kind—just like Sayulita.
How would you describe the vibe or spirit of your place/product/service?
Colorful, energetic, and full of fun. Rollado is designed to delight—whether it’s your first bite or your fifth visit. We want people to feel the magic of trying something different and walking away with a smile.
Is there a product, dish, or experience that’s especially close to your heart and why?
This year’s Valentine’s special—our Raspberry Chocolate taco—was one of my favorite creations. It’s rich, bright, and romantic, and even though it was part of a limited run, you can still order it from our secret menu (just ask!). It reminds me of why I started this business in the first place: a love story turned into something delicious and lasting.
3. Community Connection 
What does being part of the Sayulita community mean to you?
It means being surrounded by creative, driven, and supportive people who want to see each other succeed. Sayulita is a town where ideas can grow into something beautiful, and I’m grateful to contribute to that energy.
Do you collaborate with any local artisans, organizations, or causes?
Definitely. Supporting local is part of our core—whether it’s through ingredients, joint pop-ups, or getting involved in fundraisers. We’ve worked with small businesses, charities, artists, and markets, and I’m always looking for ways to collaborate and lift each other up.
How do you see your business supporting or giving back to Sayulita?
Beyond the sweet treats, I want Rollado to be a meaningful part of Sayulita. That means providing job opportunities to locals, giving back to local causes, and being present for events that celebrate community creativity. I want Rollado to grow alongside Sayulita, not just in it.
4. Personal + Fun
What’s your favourite way to spend a morning in Sayulita?
I’m usually quick to jump into work mode, but my ideal morning starts with movement—whether it’s a workout, playing sports, or doing something active to get my energy flowing. On slower days, I love grounding myself with a beach walk or casting a line while fishing. Finding that balance between hustle and calm isn’t always easy for me, but mornings like these help keep me inspired and centered.
What’s one song, scent, or memory that captures Sayulita for you?
“Walking on a Dream” by Empire of the Sun. It brings me right back to those first surreal weeks in Sayulita—where the sunsets seemed to last forever, and life felt wide open with possibility.

What’s next for you and your business?
We’re growing! Our next location is set to open in the Versalles neighborhood of Puerto Vallarta, and I’m also exploring exciting franchising opportunities. There’s always something fresh in the works—new monthly specials, creative collaborations, and big ideas to keep Rollado evolving and spreading joy.
