I love burgers- whether ground-beef, pork, chicken, turkey, or a combination of any of these, they are always delicious and satisfying. The other day I was on the Food Network site and saw a recipe for Guy Fieri’s “Stuffed Burgers”. The filling of crispy bacon and sautéed chorizo and onions sounded so good that I just had to make them last night! The combination of sautéed onions and chorizo sounded perfect for us in Sayulita! They were so delicious, that I had to share the recipe with you today.

Today I am making Roasted Kale and/or Swiss Chard with Feta. If you read my last column, I talked about Jen Segal from the blog and cookbook “Once Upon a Chef.” Jen has wonderful recipes; everything that I have made of hers has been delicious. I have adapted her recipe a little bit by adding kale to mine. Terrenal Organic store in Sayulita will likely carry organic chard and/ or kale by November, but please check with them first. Mega in Bucerias also usually carries both. Furthermore, you can find kale during high season at the Mercado del Pueblo. Thus, you can make this yummy vegetable dish in your Sayulita kitchen pretty much anytime you would like!

Art classes- check. Language classes- check. Kids’ movies- check. These and much more can now be found at Sayulita’s newest non-profit organization, El Centro Creativo. Originally created by Festival Sayulita to provide a creative outlet for locals year-round, El Centro Creativo Sayulita has now, literally, taken on a life of its own. El Centro, as most call it, can be found on Calle Pelicanos at Quintas Trujillo. El Centro is managed by Nick Sherman, Sebastian Ibarra, and Tania Cruz. These individuals have worked tirelessly to ensure that Sayulita has a community space that is inclusive and respectful.

The humpback whales that visit Sayulita each year, for many, are part of the true magic of the area. Each winter, usually in mid-November, the large and charismatic North Pacific humpback whales are spotted swimming down the Sayulita coast, announcing their presence by their signature blows or breaching as they travel, and assembling in large numbers to breed and calve. By the end of December to around the start of February, the number of whales that you may encounter on a boat trip from Sayulita can be astounding. However, in the latest U.S. Government’s NOAA global review of the species’ status in 2016, the population of Mexican humpback whales was classified as “threatened”, and for those that swim through Nayarit waters and continue on down to Central America were labeled as “endangered”.

In my last column I promised you Butter Burgers. Well, I made them last night and did not feel that they were worthy of a column. So today I am sharing with you a recipe for a French Apple Tart. I love the recipes from Jen Segal. Her blog is called “Once Upon a Chef”, and Jen always has great recipes to share. If you have never followed her, I strongly recommend checking out her blog. I made this recipe of hers for a morning coffee party the other day, and it really was a hit. This delicious cake is a perfect sweet treat for a Sayulita evening, afternoon, or even a morning with coffee. All of the ingredients for this cake are available in our Sayulita tiendas.

Ian and Kerry, along with the entire SayulitaLife team, send their heartfelt condolences to the family and friends of Tom McElhenney, who passed away on August 28, 2018, after a battle with lung cancer. Originally from Texas, where he ran a successful nursery in West Austin for 15 years, Tom followed his dreams and moved to Sayulita in 2004, where he got to work creating his masterpiece, Villa PCaso and the magnificent tropical gardens that surround his lovely vacation rental.

I set out with four friends from Sayulita for a Sunset Sail aboard the Velero Viva. As we left Sayulita it was hot, humid and sunny; we were looking forward to getting out on the water. The closer we got to Nuevo Vallarta, there were ominous dark clouds over Banderas Bay, and it looked like rain. Velero Viva is docked at the Puerto Vallarta Yacht Club, which is located in Nuevo Vallarta-- just a quick thirty minute drive from Sayulita. There is ample parking in the underground garage at the adjacent shopping center.
