In my last column I told you that I was going to make Martha Stewart’s Butter Ring Cookies. Well, I did make them, but surprisingly they were NOT my favorite. However, I did make a savory dish this week that I totally loved: shrimp scampi. The shrimp were so succulent that I had to share this recipe with you. This is the perfect dish to prepare in your Sayulita kitchen because the prep and cooking can all be done on a stove top! Honestly, if I had been served this dish in a high-end restaurant I would have been raving about it.

We (the owners & operators of Escuela Cooperativa) have been coming to Sayulita for almost ten years, and quickly fell in love with the town and its warm and welcoming residents. We wanted to give back to the community, so we started asking about opportunities for how to do so. Education has always been a priority for us, and we soon learned there was a real need for a tuition-free preschool for local children here in Sayulita. Thus, in 2016, we started holding community meetings at the cultural center to see if local families were interested. At each meeting, more parents came and brought their friends. They were very enthusiastic and shared their priorities with us. They asked many questions, and soon we had a registration list of 15 families ready to start in August of 2017.

I have been cooking and baking yummy food for so long now, and there are so many tips I have learned through the years that can help make your cooking and kitchen tasks much easier. I thought that sharing some of my tips would make for an interesting column. There are many books out there that have “pro-tips” on cooking and baking; these are the ones that I have found most useful for the everyday cook. In Sayulita, we love to live and play outdoors as much as possible, so any tips that can help make our food easier to prepare is welcome! As Martha Stewart says, “it’s a good thing!”

I love salads and have one every night with my dinner. Sometimes I feel like a rabbit! No matter what is planned for my menu, I always have a salad along with my meal. Today I would like to share a recipe for a Cobb Salad. This particular salad can be had as a full meal on its own, and it is one of my favorite meals because it is both filling and healthy. Additionally, on our hot and humid days here in Sayulita, a fresh, cold salad is always a great option for lunch or dinner. With chicken, bacon, eggs, avocado, blue cheese, fresh organic salad greens, and a delicious homemade vinaigrette, who could ask for anything more? Furthermore, all of these ingredients are easily available here in our Sayulita tiendas.

November brings all kinds of exciting events to Sayulita, including my personal favorite, the seasonal opening of the Mercado del Pueblo. This year of 2018, our own farmer’s market will open on November 2nd, and will hold the same hours as in years past, opening at 10:00 a.m. and closing at 2:00 p.m. The Mercado is lucky enough to remain in its incredible location which offers shade and lots of greenery! As many of you know, the Mercado is open every Friday from November until the end of April, and can be found on Calle Revolucion, just North of the main bridge. Parking can be found in the campo (the baseball field).

I love burgers- whether ground-beef, pork, chicken, turkey, or a combination of any of these, they are always delicious and satisfying. The other day I was on the Food Network site and saw a recipe for Guy Fieri’s “Stuffed Burgers”. The filling of crispy bacon and sautéed chorizo and onions sounded so good that I just had to make them last night! The combination of sautéed onions and chorizo sounded perfect for us in Sayulita! They were so delicious, that I had to share the recipe with you today.

Today I am making Roasted Kale and/or Swiss Chard with Feta. If you read my last column, I talked about Jen Segal from the blog and cookbook “Once Upon a Chef.” Jen has wonderful recipes; everything that I have made of hers has been delicious. I have adapted her recipe a little bit by adding kale to mine. Terrenal Organic store in Sayulita will likely carry organic chard and/ or kale by November, but please check with them first. Mega in Bucerias also usually carries both. Furthermore, you can find kale during high season at the Mercado del Pueblo. Thus, you can make this yummy vegetable dish in your Sayulita kitchen pretty much anytime you would like!

In my last column I promised you Butter Burgers. Well, I made them last night and did not feel that they were worthy of a column. So today I am sharing with you a recipe for a French Apple Tart. I love the recipes from Jen Segal. Her blog is called “Once Upon a Chef”, and Jen always has great recipes to share. If you have never followed her, I strongly recommend checking out her blog. I made this recipe of hers for a morning coffee party the other day, and it really was a hit. This delicious cake is a perfect sweet treat for a Sayulita evening, afternoon, or even a morning with coffee. All of the ingredients for this cake are available in our Sayulita tiendas.

I recently discovered that creating a tortilla shell from a bacon weave is now my go-to recipe anytime I want a fun and savory breakfast! Yes, it can be more work than preparing your standard or regular bacon and eggs on a lovely Sayulita weekend morning, but I love this recipe so much that I don’t mind the extra couple of steps it requires to make. All the ingredients for this breakfast burrito are readily and easily available in almost all of our Sayulita tiendas.
