This easy dish will wow your palate, and take you no more than a few minutes to throw together (not including prep time).
Simply start by boiling or roasting beets, I like to purchase a variety of golden and regular beets at our local Sayulita Friday farmers market. I then like to prep seasoned olive oil, chop some garlic, and rosemary, add salt and pepper to taste, and saute for a few minutes until the garlic is golden brown.
Using a thick greek unsweetened yogurt, spoon a generous amount onto the plate, lay sliced beets on top, and drizzle with olive oil.
