LIVE, LOVE, & EAT in Sayulita — A Recipe for Avocado Fries

Are you finding yourself bored during quarantine? Get the family together and spend some time trying out a new and fun recipe!. Everyone loves a good batch French fries; this recipe, however, for “Avocado Fries” is a healthier take on the classic and beloved snack, that everyone in the family will surely love! The best part is that it’s always Avocado season in Sayulita! I had not even heard of avocado fries until a couple of weeks ago; my husband and I happened upon them on the menu at one of the beach restaurants here in Sayulita! Being a foodie and because I love avocados, I just had to try them. 

Those avocado fries had to be one of the most delicious things I have ever eaten here in Sayulita! They were so good that I came home and went right to my kitchen to see if I could duplicate them. The ingredients and the method for this recipe are very easy — anyone can make them from home! 

INGREDIENTS:

-2 large avocados; they should be firm but ripe enough to slice into wedges.

-½ cup all purpose flour. (If you are watching your carbs you can substitute for almond flour).      

-1 Tablespoon of chili powder.

-2 teaspoons of salt, divided into 1 & ½ teaspoons, and ½ teaspoon.

-2 eggs, beaten.

-1 & ½ cups of panko breadcrumbs. (If you are concerned about carbs, you can finely crush up chicharones, and add some finely crushed almonds and use this instead of the panko breadcrumbs).

-⅓ cup vegetable oil or avocado oil.

INSTRUCTIONS:

  1. Slice the avocados in half so that you can then remove wedges that are ½” thick.
  2. In a small bowl, mix together the flour, chili powder, and 1 & ½ teaspoons of  salt.
  3. Dredge each avocado slice in the flour, then dip into the egg mixture. After, roll the avocado in the Panko breadcrumbs (or ground chicharones & almonds). Repeat with all avocado slices.
  4. Heat the vegetable oil in a pan over medium-high heat. You do not need a deep layer of oil, so use an appropriate pan.
  5. Add a single layer of avocado slices to the pan. Cook for 2-3 minutes per side, or until golden brown. 
  6. Drain on paper towels. I like to do 4 or so wedges at a time so that they are not crowded in the pan.
  7. Sprinkle the avocado slices with the remaining ½ teaspoon of salt and serve immediately (you can serve with a dipping sauce if desired.)

I made a chipotle-mayo dipping sauce from my homemade mayonnaise — I simply added finely blended chipotle in adobo sauce. Add a bit of the chipotle at a time until you have the amount of flavor that you prefer. These chipotles are VERY hot, so I recommend adding slowly to your taste. You can find these chipotles in most of our Sayulita tiendas. You can also serve these fries with ranch dressing.
