For a long time, tattoos have been negatively stigmatized in our society (and sometimes still are). “Only criminals get tattoos!” “Tattoos are for gang bangers!” You’ll never be able to get a professional job with all of those! I’ve heard these sentiments expressed often. However, in today’s modern culture, more so than ever, this negative stigma on tattoos is quickly dissolving. Chops, the owner and lead tattoo artist at Papillion Family Studios here in Sayulita is profoundly talented, professional, and deeply passionate for his craft. Chops is unmistakably and wonderfully, Chops—even his name is intriguing. What does “Chops” really mean? Is it a guise, or some kind of pen name? Is he a “one name only” artist, like Prince or Cher? Chops’s intrigue and signature style are not only in his name, but in his entire persona. Whether it be the black, short sleeve button-up he wears daily (only the top button buttoned, of course, revealing his fully tattooed stomach), his long, red, ZZ Top inspired beard, or his kind heart and tell-it-like-it-is personality, Sayulita knows Chops when we see him. I talk with Chops about his career in tattooing, his signature style, and about his tattoo shop, Papillion Family Studios.

“It’s not about money.” This is a phrase not often heard in our modern, high-tech, fast- paced world of today, and even in our little town of Sayulita because of its massive growth over the years from a sleepy little fishing village to a bustling tourist destination. However, when talking with Nick and Sebastian, the owners and leaders of El Centro Creativo, the Community Center for Sayulita, I hear this phrase genuinely articulated several times. And I know they mean it.

Janice Parker is generous, selfless, and a dedicated community member of Sayulita who has worked incredibly hard in order to get trained lifeguards and lifeguard towers on our beaches of Sayulita. Thanks to her devotion and tenacity, the safety of swimmers and surfers on our beaches has improved tremendously. I asked Janice to tell me about how she became involved in this project.

Many of you may remember when I started my journey last year at the beginning of the school year at Primaria Damian Carmona in Sayulita. With your help and donations we have accomplished many things; 70 new desks were purchased, the lunch area roof was repaired, a wash area was constructed, plastic dishes were purchased, disposables were eliminated, flood lights were purchased and installed, the exterior wall was beautifully painted, small plumbing and electrical repairs were made, rubber mats for the bathrooms were added, 2 AC mini split units were donated, and the latest fundraiser will be used to repaint the entrance archway and fix one of the PE areas.

Today I met one of Mi Chaparrita Beach Club's enthusiastic team members, Lesley, at one of my favorite places to hang out and enjoy the beach. Pizza has always been my favorite go-to food when I want something special, so I absolutely needed a Ketogenic Friendly Pizza Crust. I have already given you a Cauliflower Crust Recipe, and I really like it, but I have recently found my perfect crust. Tastes so much like the real deal! Although a weird name, in my opinion (it's called a Fathead pizza crust), I decided to give it a try, and I am more than happy that I did. It is fantastic; thin, crispy, easy to make, and to top it off, this crust tastes delicious! Your Sayulita family and friends will be shocked when you tell them that this is a wonderful low carb treat.
